The Perfect Soup For Cold Season

It’s official - cold season is upon us! Whether you’re in the midst of fighting off a bug, or you can feel the beginnings of one coming on, I’ve got the perfect soup recipe for you. Here’s why…

Every ingredient of this soup is jam packed with healing properties. For example:

Sage is antibacterial, an antioxidant, AND anti-inflammatory. Rosemary is also an antioxidant and anti-inflammatory, AND it helps improve digestion. Thyme helps to treat a sore throat. Onions contain fiber and folic acid, a B vitamin that helps the body make healthy new cells. Bok Choy supports a healthy immune system, and healthy digestion. Sweet Potatoes also support a healthy immune system, and help to improve inflammation. Lemon Juice is a good source of vitamin C.

These are just some of the many healthy benefits that this soup brings to the table.

Now, I’m not saying that this soup is necessarily a magic potion in disguise, but, just sayin’….my partner, Pete, and I have both been fighting off oncoming colds here and there for the past month or so. We’ve also been eating this soup at least once, if not twice a week for the past few weeks. Neither of us have had our oncoming symptoms develop into a full-blown cold. Just some food for thought!

And hey, even if you’re not dealing with any sickness, this soup is still the perfect bowl of comfort to make at this time of year, as the days get shorter, and the air grows colder.

So, without further ado, here’s what you’ll need to create this magical bowl of wonder:

  • 1/4 cup extra-virgin olive oil

  • 1 onion, diced

  • 1 bunch of bok choy, sliced

  • 2 cups sweet potatoes, diced

  • 2 cloves garlic, minced

  • 2 cups mushrooms, diced

  • 1 teaspoon dried sage

  • 1 teaspoon dried thyme

  • 1/2 teaspoon fresh rosemary

(Please note: depending on availability, fresh herbs also work well in this soup.)

  • salt and pepper to taste

  • juice of 1 lemon

  • 1 package of Quorn Meat-Free Chicken Strips

(Note: 1 cup diced cooked chicken may be used in place of Quorn Chicken Strips.)

  • 6 cups vegetable broth

(Or: bone or chicken broth)

  • 1 package of VeeTee pre-cooked rice

(Or: any other pre-cooked rice of your choosing.)

HOW TO:

  1. In a large soup pot, heat the olive oil over medium-high heat. Add the onion, bok choy, and sweet potatoes, and cook until onion and bok choy are tender and translucent - about 5 or 6 minutes.

2. Add the garlic, mushrooms, sage, thyme, rosemary, salt and pepper, and lemon juice. Stir regularly until tender - about 3 to 5 minutes.

3. Add the Quorn (or chicken) and broth, then reduce heat to low and simmer for 15 to 20 minutes.

4. Add VeeTee rice and cook until heated through - about 2 minutes.

5. Serve into the perfect handheld bowl, put on your favorite hoodie and movie, and enjoy!
