Nourishing Bowl of Autumn Goodness

If you’re looking for a meal that’s rock your world delicious, makes your body and taste buds happy, and is so ridiculously easy to make, then this bowl is the answer for you! I wanted to create a meal that was fast and simple to assemble*, included as much diversity in nutrition and flavor as possible, and, included as many seasonal foods at possible. This is what I came up with:

  • Baby Kale

  • Basmati Rice

  • Honey Crisp Apple Slices

  • Avocado Slices

  • Quorn Chicken Strips

  • Roasted Sweet Potato Cubes

  • Roasted and Halved Brussel Sprouts

  • Sprinkling of Almonds

  • Sprinkling of Feta Cheese

  • Drizzle of Olive Oil

  • Drizzle of Apple Cider Vinegar

  • Drizzle of Maple Syrup

The coolest thing about this bowl, I think, is that it lends to total creativity in your meal preparation. Since it’s much like a salad, and not at all a strict recipe, you can include as much or as little of any particular food in the bowl as you want. You can also sub out any of the items for foods you enjoy more or have on hand already. For example, the Basmati Rice for Quinoa, or the Quorn Chicken Strips for Chicken. That’s what I did. I found a bowl similar to this, myself, online, and I tweaked it to what I enjoy eating, and what I had available in the house. You could also, of course, leave out anything that you don’t enjoy eating or have food sensitivities or allergies to.
